Le 4 octobre dernier, les \u00e9tudiants d\u2019agronomie orientation Agroindustries et biotechnologies (3e<\/sup> AIBT) se sont rendus au CTA (Centre de Technologies Avanc\u00e9es) de Li\u00e8ge.<\/p>\n

Voici leur t\u00e9moignage\u00a0: \u00ab\u00a0\u00c0 notre arriv\u00e9e \u00e0 Li\u00e8ge, nous f\u00fbmes accueillis chaleureusement par Mme Wery, coordinatrice du CTA. Elle nous encadra durant toute la matin\u00e9e afin de nous expliquer la fabrication de la confiture de figues sous basse pression et basse temp\u00e9rature. Nous avons\u00a0 test\u00e9 cette technique en suivant un protocole pr\u00e9cis mais facile \u00e0 mettre en \u0153uvre et ainsi nous essayer sur les diff\u00e9rentes machines HighTech du laboratoire. En plus d’explications pr\u00e9cises sur le proc\u00e9d\u00e9 et sur le fonctionnement des appareillages, nous avons \u00e9galement re\u00e7u des explications sur le proc\u00e9d\u00e9 dit de \u00ab\u00a0lyophilisation\u00a0\u00bb. Il s’agit de congeler un aliment pour ensuite le mettre dans une machine \u00e0 temp\u00e9rature ambiante mais sous basse pression, ce qui permet de faire \u00e9vaporer toute l’eau contenue dans ce m\u00eame aliment. Les morceaux de fraises, bananes, figues et pommes ainsi lyophilis\u00e9s se sont r\u00e9v\u00e9l\u00e9s tr\u00e8s bons, malgr\u00e9 un aspect plut\u00f4t \u00e9trange et sec.<\/p>\n

Durant l’apr\u00e8s-midi, nous avons pu \u00e9tudier diff\u00e9rentes techniques et appareils se trouvant dans une cuisine HighTech., allant de fours tr\u00e8s perfectionn\u00e9s permettant une cuisson automatique d’aliments \u00e0 l’utilisation d’azote liquide pour la mise en forme du chocolat. Nous avons\u00a0 essay\u00e9 de r\u00e9aliser un dessert au chocolat et \u00e0 la cr\u00e8me anglaise en utilisant des techniques simples, le tout encadr\u00e9 par Mr Pillon, fort sympathique et p\u00e9dagogue. Il nous a appris \u00e9galement \u00e0 pr\u00e9parer des entr\u00e9es sal\u00e9es \u00e0 partir d\u2019\u0153ufs \u00e0 la \u00ab\u00a0coque\u00a0\u00bb.<\/p>\n

Au final, ce fut une chouette exp\u00e9rience que nous recommandons aux autres \u00e9coles techniques, ainsi qu’au curieux de la cuisine\u00a0\u00bb.<\/p>\n","protected":false},"excerpt":{"rendered":"
